Donut lover (and recipe genius), Sami of @hopeandhummus came up with a homemade strawberry donut recipe to share her love of donuts. These donuts are vegan, gluten-free, and made with some healthier ingredient alternatives! This recipe makes 9 fluffy donuts with a delicious strawberry flavor.

Ingredients

Donuts

½ cup Bored Cow Strawberry mixed with 2 tsp apple cider vinegar

1 cup gluten-free flour

½ cup brown sugar

¼ cup melted vegan butter

¼ cup applesauce

2 tsp vanilla extract

1 tsp baking soda

⅓ cup diced strawberries

Glaze

2 tbsp strawberry puree (about 4 strawberries)

2 cups powdered sugar

Instructions

  1. Preheat oven to 350°

  2. Grease 9 donut molds with coconut oil.

  3. In a bowl, mix together wet ingredients until smooth, then mix in the sugar. 

  4. Add in the dry ingredients until you have a smooth batter.

  5. Spoon the batter evenly into the prepared donut pans and bake for 16-18 minutes, or until lightly golden on the edges.

  6. Let the donuts cool in the pan for about a minute before transferring to a wire rack to cool completely.

  7. While donuts are cooling, mix together the glaze ingredients, adding the powdered sugar slowly until you reach your desired consistency.

  8. Dip each donut in the glaze and enjoy!
