This creamy, vegan friendly pasta is fresh and vibrant, making it perfect for an easy springtime lunch or dinner! Plus, it might even spark some childhood nostalgia like it did for recipe developer, Audrey, "Growing up, one of the repeat books in our household was called Patrick Eats His Peas. Patrick was this little bear I think? He hated peas and had to make a concoction including ketchup and a bunch of other things to be able to enjoy them. He called them balls of mushy poison? The funny part is my mom absolutely hates peas. And what does she hate more than peas? Ketchup! So I honestly can’t believe this book was such a popular one for us growing up because it probably drove her crazy. Anyway the good news is the peas in this recipe paired with fresh mint, lemon, and creamy Bored Cow makes an absolutely delicious sauce – and is not at all mushy poison, I promise. Cheers!"

Ingredients

¼ cup Bored Cow Original

1 cup of frozen peas

5 ounces of pasta (traditional or chickpea) 2 tbsp mint leaves, plus more for garnish

1 garlic clove

1 lemon

1 tbsp olive oil

2 tbsp hemp hearts

Salt and pepper to taste

Instructions

  1. Bring salted water to a boil.

  2. Add in frozen peas and cook until they float to the top – approximately 2-3 minutes.

  3. Remove peas from the water and bring it back to a boil. Add pasta and cook as directed on the package.

  4. Transfer the cooked peas to a blender. Add the mint, garlic, zest of half a lemon, olive oil, hemp hearts, salt, pepper, and Bored Cow Original. Blend mixture.

  5. After pasta is finished cooking, reserve at least ¼ cup of pasta water before draining.

  6. Use reserved pasta water to continue blending mixture until you reach the desired consistency.

  7. Pour sauce over drained pasta. Top with mint leaves, lemon juice, salt, pepper, or whatever is desired. Enjoy!
