These pumpkin chocolate no bake cookies are both easy and quick to make. Using Bored Cow chocolate to make a light glaze, these bites are a delicious balance of sweetness and warm flavors of fall. Just prep your dough, refrigerate it for a couple hours, and viola — delicious cookies that didn't require an oven to make!

Ingredients

Cookies

1 tbsp Bored Cow Chocolate

2 tbsp pumpkin puree

2 tbsp vegan butter

¼ cup sugar

1 & ¼ cups quick oats

1 tsp cinnamon

1 pinch of salt

2 tbsp vegan chocolate chips

Glaze

¼ cup Bored Cow Chocolate

½ cup powdered sugar

Instructions

Cookie Dough

  1. Combine Bored Cow, pumpkin puree, and vegan butter in a bowl.

  2. Microwave for 1 minute.

  3. Mix in cinnamon, oats, salt, and chocolate chips.

  4. Roll into bite-sized balls, and refrigerate for 2-3 hours. 

 

Glaze

  1. In a bowl combine Bored Cow and powdered sugar, mix until it's a silky consistency.

  2. Remove cookies from the fridge, drizzle on your glaze, and enjoy!
